Hosts are expected to make customers feel welcomed and provide attentive service from the moment a customer enters the establishment. They are also in charge of fairly assigning tables to wait staff so that servers can split the workload fairly and get a fair opportunity to earn tips during their shift. Hosts lead guests to their tables, manage reservations, and communicate with front-of-house staff about when they have a new party in their section. Hosts support bussers in clearing tables, wiping down menus and organizing silverware.
A Host should have skills that allow them to interact with guests and help keep restaurant operations running smoothly. Some qualifications for a Host include the following:
Prior customer service experience in the hospitality industry
Positive attitude and interpersonal skills
Good communication skills and phone etiquette
Ability to stand for long periods of time

A Food Server, also known as a Waiter or Waitress, is responsible for taking orders from restaurant patrons and delivering their food to them. Their duties include explaining the menu to their customers, communicating with kitchen staff, and balancing dishes as they bring them to the appropriate table.
Food Servers collaborate with Hosts, Cooks, Chefs, Bartenders, Restaurant Managers, and other food service staff to provide excellent customer service and maintain a positive reputation for the organization. Food Server responsibilities include:
Taking food and beverage orders and accurately entering them into the ordering system
Making menu item recommendations
Communicating any food allergy or special nutrition needs to kitchen staff
Ensuring all orders are filled quickly and accurately and that food is high quality
Providing attentive service to diners, like refilling drinks as needed and checking their needs during meals
Promptly addressing any customer service issues and referring to management if and when necessary
Performing some cleaning duties, such as at the service station, around the kitchen and in the dining area

Bartenders, or Mixologists, mix and serve alcoholic beverages based on customer requests. Their duties include verifying the identification and age of customers, preparing and serving alcoholic beverages, accepting payment from customers, cleaning glasses and bar utensils, and balancing cash receipts to record sales.

A Line Cook plates dishes and completes basic food-prepping tasks for a restaurant. Their main duties include preparing and cooking food in a specific station, cleaning prep areas, and ensuring the kitchen is stocked.

A Prep Cook, or Preparatory Cook, is responsible for providing a supportive role to kitchen staff in the preparation of meals and ingredients. Their duties include organizing and labeling food items in storage closets, performing tasks like chopping ingredients and sanitizing their work station during and after service.
Prep Cooks perform various food preparation, cooking and cleaning tasks to ensure the kitchen remains efficient in creating and delivering dishes for patrons. Their duties and responsibilities include:
Completing all tasks, in order, on the prep list from the Head Chef or other kitchen manager
Labeling and stocking all ingredients on easily accessible shelves
Washing, chopping and sorting ingredients like fruits, vegetables and meats
Measuring quantities of seasonings and other cooking ingredients
Parboiling food, reducing sauces and starting first steps in various dishes
Cleaning dishes, washing cooking utensils and cookware, taking out the trash and sanitizing kitchen
Adhering to all relevant nutrition and sanitary regulations and standards
Keeping track of ingredient inventory and collaborating with other kitchen and management staff to order resupply

A Dishwasher, or Kitchen Helper, is responsible for cleaning dishes in a food service environment to ensure that the kitchen has a steady supply of clean plates, bowls, silverware, pots, pans, and glasses. Their duties include prioritizing loads of different types of crockery and kitchenware, hand-washing dishes, loading the dishwasher, and placing dishes to dry.
Washing dishes at a professional level is different than in your own kitchen. Our restaurant has a large, commercial-quality washer that can quickly wash several trays of dishes. Dishwashers unload the cutlery and dishes brought to the kitchen by Bussers while loading and organizing them into trays for the washer. Commercial dishwashers cannot always accommodate larger pans and pots, so they may occasionally need to be washed by hand.
In addition, they may be asked to assist with:
Prep work
Taking garbage and trash to the dumpster area
Washing work areas, refrigerators, cooking equipment, walls, and floors
Maintaining and cleaning the commercial dishwasher machine

Food Runners, or Expeditors, play a crucial role in restaurants. They act as a liaison between the kitchen staff, the front-of-house team, and the restaurant’s guests. Their primary duty is to deliver food to guests, and they work alongside Servers and Bartenders to ensure customer satisfaction.
To make sure customers get the correct order and are happy with their meal, Food Runners need to have some clear duties and responsibilities, including:
Delivering food to customers while ensuring they receive the correct order
Acting as the primary contact between the front-of-the-house and back-of-the-house staff
Setting tables before clients arrive by ensuring napkins, decorations, and utensils are all on the tables
Making sure clients with children get special silverware and items meant for kids
Restocking side stations with ice, glassware, and other supplies
Refilling customers’ drinks when needed
Ensuring they meet food safety principles when taking food to clients, and cleaning tables and floors after guests have left
Reporting to management as needed

A Barback, or Bartender Assistant, is responsible for assisting Bartenders to ensure they have everything they need to serve customers efficiently. Their duties include replacing kegs, restocking glasses and other supplies needed to make drinks, and maintaining a clean dining space throughout their shift.
Examples of Barback duties and responsibilities include:
Keep the bar stocked with liquor, syrups, glasses, napkins, and all other necessary items before and during service hours.
Prepare garnishes, refill ice wells, change beer kegs, and restock napkins and straws.
Clean up the spills, remove the glassware, and organize the counter.
Keep the bar area neat and clean.
Coordinate with managers, kitchen staff, and security personnel to ensure efficient service to customers.
Handle emergency situations, like cleaning up broken glasses and clearing up clogged drains.

A Busser is in charge of setting and clearing tables at a dining establishment to provide a clean and tidy environment for restaurant patrons. Their duties include removing used dishes, re-setting silverware, and filling beverages for diners.
A Busser works primarily in the dining area of the restaurant. They move back and forth between these areas attending to diners and assisting waitstaff with their duties. A Busser’s duties and responsibilities include:
Removing used plates, glasses, cutlery, and napkins from tables after diners are done eating
Wiping up water spills, food stains, and dirt from tables
Replacing cutlery and glassware in anticipation of new diners
Rolling silverware, refill salt and pepper shakers, and any other depleted condiments on the dining table
Refilling drinking glasses with water
Bringing out meal orders if expediters and waitstaff are busy
Handling the cleaning of the dining area at the close of the day
